James Thien Le
Chef and founder of FRESH FEED LA is no stranger to the food. From a young age, food was an integral part of life being the son of two talented Vietnamese home cooks. Both parents gave him a perspective on food that till this day remains at core of his foundation. The flavors and smells that were present at the dining table daily, shaped his pallet and directed his dream.
James pursued his love for food immediately out of primary school and sought training at The Art Institute Of California - Hollywood, where he received his Culinary Science degree. Upon graduation, James wasted no time in seeking mentorship. His first stop, the three time Michelin Star holder Gordon Ramsay at the London Hotel - Beverley Hills.
James worked under Chef Anthony Keane who gave him the knowledge and experience to cook food with soul. Under Keane, James was able to grasp the philosophies of sustainable cooking and sourcing, along with the importance of strong leadership and teamwork.
Following his training in Los Angeles, James pursued apprenticeship under James Beard awarded Chef Eric Ziebold at the Michelin one star restaurant- Kinship/Metier in the nations capital. It was in this restaurant that James honed his skills and built upon his craft. He witnessed firsthand the dedication and passion that it takes to create not just great food but and exceptional dining experience.
"I love food, so much that I lived the early years of my life quite overweight. This experience with food gave me the insight and understanding of the importance of food. I am fortunate enough to live in an area that is diversely abundant in produce and meats. This foundation allows me to provide the freshest quality food possible to my guest.
It is my belief that food is medicine. When it is properly utilized, it can give our mind, body, and spirit great power.''
